Raspberry & champagne jam by La Chambre aux Confitures

 

Puff pastry, delicious raspberry jam (the extra-large jar should do the trick!), a nifty turn of hand to make the shape and voila!  Homemade croissants with raspberry jam.

Ingredients:

Makes 8 mini-croissants

 

  • 1 packet puff pastry
  • Raspberry jam
  • 1 tbsp milk
  • 1 egg

 

Instructions:

 

Preheat the oven to 200°C.

Roll out the pastry and cut into 8 equal triangles and make a small nick in the base of one of the corners to make sure it attains the correct shape. Spread with jam and fold the corners back into the middle.

Transfer to a baking sheet covered with greaseproof paper. Brush lightly with an egg and milk wash for a golden finish without burning.

Cook for at least 20 – 25 minutes.

Place on a cooling rack and allow to cool for several minutes.
