Recipe : Cherry Clafoutis

Cherry Clafoutis is a delicious French flan dessert made typically with cherries. It is utterly delicious!

Cherry Clafoutis

Serves 6 – 8

Preparation time: 15 mins

Cooking time: 40 mins



– 400g cherries (pitted)

– 1/2 glass of rum

– 25cl milk

– 80g flour

– 80g granulated sugar

– 2 packets of vanilla sugar

– 1 pinch of salt

– 3 eggs (at room temperature)



Wash the cherries and remove the stems and stones. Dust with half the sugar and transfer to a buttered tart dish. Meanwhile, in a bowl, mix the flour, a pinch of salt and the remaining sugar. Then, add the eggs and whisk well, before gradually adding the milk and rum. Pour the mixture over the cherries and bake in the oven at 200 °C for 35 – 40 minutes.


Dust with icing sugar just before serving. And Bon appétit !
